Make The Season’s Tailgate Parties The Best Yet

As the 14-week college football season starts with a bang, you will have the opportunity to host an epic tailgate party in the parking lot (or at home on game day). You’ve been perfecting your game since that first kickoff, aiming to deliver the best food possible. Now is not the time to slack off. It’s time to elevate your tailgating game and go for the win. We’re here to assist with 3 of our team’s favorite grilling recipes perfect for a tailgating extravaganza.

Bourbon Soaked BBQ Chicken Wings

Hands down, the BEST way to cook chicken wings. Dry rubbed, smoked to perfection, basted with a bourbon bbq sauce, then charred until crispy!

Ingredients

  • 1/2 Cup Bourbon
  • 1 Cup Ketchup
  • 4 Tbsp Apple Cider Vinegar
  • 2/3 Cup Honey
  • 1/2 Cup Brown Sugar
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder 
  • 4 Tsp Hot Sauce
  • 4 Tbsp Worcestershire Sauce
  • 1 Tsp Salt 

 

Wings

  • 24 Chicken Wings
  • Salt and Pepper 
  • ½  Cup Cilantro; chopped

 

Instructions

Sauce can be made in advance and used to marinate wings overnight.

  1. Heat 30 coals in a condensed pile in a fire pit.
  2. When the coals are mostly white, whisk together bourbon, ketchup, apple cider vinegar, honey, brown sugar, onion powder, garlic powder, hot sauce, Worcestershire sauce, and salt in a cast iron skillet over the coals. 
  3. Bring to a simmer for 20 minutes, then remove from heat.
  4. Pat and dry chicken wings. Salt and pepper dried wings. Add to a large bowl and coat with 1/4 cup of the prepared bourbon BBQ sauce. Set the rest of the sauce aside.
  5. Marinate wings for at least 10 minutes. If marinating overnight in a fridge, remove from the fridge at least 15-20 minutes before preparing to cook.
  6. Oil and heat cast iron griddle on the grate while wings are marinating.
  7. Place wings on the griddle, skin side up. Cook for 30-35 minutes until crispy, flipping halfway through. 
  8. Remove from the fire and add wings to a bowl, coat with a healthy pour of Bourbon BBQ Sauce (approximately 1 to 1 ½ cups of sauce – you want plenty of sauce to cover them). Stir to ensure all wings are coated. 
  9. Return wings to the griddle and continue cooking for 8-10 minutes or until the internal temperature of the meat reaches 165°F.
  10. Garnish with chopped cilantro. Serve with additional sauce on side and plenty of wet wipes.

Grilled Firecracker Potato Salad

A bold and spicy twist on the classic potato salad, featuring grilled potatoes and a zesty dressing that packs a punch.

Ingredients

  • 3 pounds small red potatoes (about 30), quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

 

Dressing:

  • 1-1/2 cups mayonnaise
  • 1/2 cup finely chopped onion
  • 1/4 cup Dijon mustard
  • 2 tablespoons sweet pickle relish
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper

 

Salad: 

  • 6 hard-boiled large eggs, chopped
  • 2 celery ribs, finely chopped
  • Minced fresh chives, optional

 

Instructions

  1. Toss potatoes with oil, salt and pepper; place in a grill wok or basket. Grill, covered, over medium heat 20-25 minutes or until potatoes are tender, stirring occasionally. Transfer potatoes to a large bowl; cool slightly.
  2. In a small bowl, mix dressing ingredients. Add dressing, eggs and celery to potatoes; toss to combine. Refrigerate, covered, 1-2 hours or until cold. If desired, sprinkle with chives.

Grilled S'mores Nacho

Imagine a steaming plate of nachos but instead of cheese…with chocolate and marshmallows! Nachos for dessert! There are so many topping options you can add on this versatile recipe.

Ingredients

  • White Corn Chips or Graham Crackers
  • Chocolate Chips, any variety
  • Mini and Large Marshmallows

 

Instructions

  • Layer white corn chips or graham crackers in a foil pan. 
  • Top with chocolate chips and mini marshmallows. Repeat two or three times. 
  • Top with large marshmallows as the final layer. 
  • Heat on the grill until melted. 250-350F works fine.

 

Notes

If using white corn chips, I like to sprinkle the chips with cinnamon and sugar. Either honey or cinnamon graham crackers work well also. We placed the dish in the picture at high heat quickly to achieve a char on the large marshmallows. Feel free to add other toppings, such as caramel and fruit.

Grilled bananas also make an excellent topping! Take an unpeeled banana and cut it crosswise and then lengthwise into 4 planks. Grill flesh side down to caramelize the pieces.
